Su primer libro: A Snúli le gusta estar solo fue publicado en 2019 en español, islandés e inglés. Su segundo libro: Autosarcophagy - To Eat Oneself, es una colección de relatos cortos para adultos. Fue publicado en 2020 en inglés e islandés. La colección de relatos cortos de Cova fue seleccionada por el teatro nacional de Islandia para ser convertida en una obra de teatro. Su tercer libro, “A Snúli le cuesta decir no” es el segundo libro en la serie de Snúli y fue publicado en el 2022. Tras el éxito de sus primeros libros infantiles, Helen Cova publicó un tercer libro: Svona tala ég (Así hablo yo) con el que aseguró una nominación en la categoría mejor libro infantil islandés en el premio de literatura infantil de Reykjavík ciudad UNESCO. El trabajo de Cova ha sido publicado en antologías y revistas literarias, tanto en Islandia como en el exterior; incluyendo “Ós - The Journal”. “Tímarit máls og menningar”, “Skaldreki”, “The Polaris Trilogy” una antología destinada a aterrizar en el polo sur de la luna a bordo de un vuelo espacial de la NASA y Ordskælv.
